Saturday morning I woke up craving waffles.We have been painting our kitchen this last week so the food has been scarce, but the waffle craving must be satisfied. Jon had just bought a really nice waffle maker at the local thrift store for 2 dollars. We weren't sure if it worked or not but we gave it a try.
Something about waffles with berries that just get me :)
I had some frozen cranberries and just a little bit of blue berries which I threw in a pan with sugar. They melted down really nice and were so yummy with their rich colorful sauce.
The recipe I used I should have cut in half. It was huge. We had waffles for breakfast Saturday morning, and Saturday afternoon snack and Sunday morning breakfast.
Waffle Recipe:
Ingredients
2 eggs
2 cups all-purpose flour
1 3/4 cups milk
1/2 cup vegetable oil
1 tablespoon white sugar
4 teaspoons baking powder
1/4 teaspoon salt
1/2 teaspoon vanilla extract
Directions
Preheat waffle iron. Beat eggs in large bowl with hand beater until fluffy. Beat in flour, milk, vegetable oil, sugar, baking powder, salt and vanilla, just until smooth. Spray preheated waffle iron with non-stick cooking spray. Pour mix onto hot waffle iron. Cook until golden brown. Serve hot.
I just woke up from a lovely Sunday nap, trying to muster up my strength to go and finish that kitchen. Its all done now and it just needs to be put back together. I can't wait to make a post about it all finished.

OH yum! I am trying hard not to be jealous! I would so love to have a waffle maker and give these a go.
I shall add a waffle maker to my kitchen wish list I think! They look delicious.
Waffle makers aren't the first item you see in a British store, are they, Kirsteen?! But I think I may go a-hunting. This looks perfectly yummy.

the great thing about waffles and pancakes is that they both freeze really well, so if you ever have another huge batch you can tuck some away for another day :) the berries sound wonderful with waffles, I'll have to get some next time I go grocery shopping! :)
P.S. I am totally impressed with how perfect your waffles turned out, lol, for some reason I can never get mine to go all the way to the edges LOL
